Abalone spring rolls

INGREDIENTS
- 3 abalone, cleaned and minced
- 3 shiitake mushrooms, either fresh or re-hydrated, finely chopped
- 1/2 cup grated carrot
- 1 spring onion, finely sliced
- 1 Chinese sausage, finely sliced
- 2 tbsp oyster sauce
- 6 butter lettuce leaves
- 6 mini spring roll wrappers
- 1 tbsp corn flour
METHOD
- Mix all the ingredients togethor except the wrappers and lettuce
- Place a heaped tbsp of mixture along the bottom third of the wrapper
- Roll up tightly, folding the sides in then sealing the ends with water or a paste of water and corn flour
- Deep fry until golden at 190 degrees, then drain on paper towel
- Serve with a soy-based dressing, and have lettuce leaves on hand to wrap the rolls in.
