Abalone spring rolls

INGREDIENTS

  • 3 abalone, cleaned and minced
  • 3 shiitake mushrooms, either fresh or re-hydrated, finely chopped
  • 1/2 cup grated carrot
  • 1 spring onion, finely sliced
  • 1 Chinese sausage, finely sliced
  • 2 tbsp oyster sauce
  • 6 butter lettuce leaves
  • 6 mini spring roll wrappers
  • 1 tbsp corn flour

METHOD

  1. Mix all the ingredients togethor except the wrappers and lettuce
  2. Place a heaped tbsp of mixture along the bottom third of the wrapper
  3. Roll up tightly, folding the sides in then sealing the ends with water or a paste of water and corn flour
  4. Deep fry until golden at 190 degrees, then drain on paper towel
  5. Serve with a soy-based dressing, and have lettuce leaves on hand to wrap the rolls in.
