Abalone and sweet potato fritters

INGREDIENTS
- Diced abalone
- Optional abalone roe from trimmings
- 75g grated sweet potato
- 1 tbsp chopped chives
- 1/2 beaten egg
- 1/2 cup of milk
- 1/2 cup self raising flour
- Pinch of salt
- Grapeseed oil to fry
- Lemon wedges to serve
METHOD
- Mix the egg, flour, and half the milk togethor. Add the abalone, abalone roe (mash with a fork before adding), sweet potato, salt and chives. Add more milk if the batter is too stiff.
- Pour 1cm depth of oil into a heavy base pan. Heat oil over a moderate heat. Once hot, spoon the mixture by tablespoonful into the oil. Cook until golden, 3-4 minutes per side.
- Drain on paper towel, then salt and serve hot with lemond wedges.
