Abalone and sweet potato fritters

INGREDIENTS

  • Diced abalone
  • Optional abalone roe from trimmings
  • 75g  grated sweet potato
  • 1 tbsp chopped chives
  • 1/2 beaten egg
  • 1/2 cup of milk
  • 1/2 cup self raising flour
  • Pinch of salt
  • Grapeseed oil to fry
  • Lemon wedges to serve

METHOD

  1. Mix the egg, flour, and half the milk togethor. Add the abalone, abalone roe (mash with a fork before adding), sweet potato, salt and chives. Add more milk if the batter is too stiff.
  2. Pour 1cm depth of oil into a heavy base pan. Heat oil over a moderate heat. Once hot, spoon the mixture by tablespoonful into the oil. Cook until golden, 3-4 minutes per side.
  3. Drain on paper towel, then salt and serve hot with lemond wedges.
