Indonesian style gummy shark curry

INGREDIENTS
- 800g gummy shark fillets, diced
- 1 can coconut cream
- Lemongrass
- Kaffir lime leaves
- Grape seed oil
For the spice paste:
- 4 cloves garlic
- 2 red chillis
- 2 shallots
- 2 tomatoes
- 1 tbsp tumeric
- 1 thumb sized piece ginger
- 2 sticks of lemongrass
- Palm sugar
- 1 tbsp ground coriander
- 1 tbsp tamarind paste
- 1 tsp black pepper
- 1 tsp nutmeg
- Fish sauce
- Grape seed oil
METHOD
- Chop and blend all the spice paste ingredients until smooth.
- Heat the grape seed oil and add kaffir lime and lemongrass, then add spice paste and fry for 1-2 minutes until fragrant.
- Add the shark and stir to coat, then add 1 cup water and 1 can coconut cream. Simmer until fish is cooked through.
- Serve with jasmine rice.
