Indonesian style gummy shark curry

INGREDIENTS

  • 800g gummy shark fillets, diced
  • 1 can coconut cream
  • Lemongrass
  • Kaffir lime leaves
  • Grape seed oil

For the spice paste:

  • 4 cloves garlic
  • 2 red chillis
  • 2 shallots
  • 2 tomatoes
  • 1 tbsp tumeric
  • 1 thumb sized piece ginger
  • 2 sticks of lemongrass
  • Palm sugar
  • 1 tbsp ground coriander
  • 1 tbsp tamarind paste
  • 1 tsp black pepper
  • 1 tsp nutmeg
  • Fish sauce
  • Grape seed oil

METHOD

  1. Chop and blend all the spice paste ingredients until smooth.
  2. Heat the grape seed oil and add kaffir lime and lemongrass, then add spice paste and fry for 1-2 minutes until fragrant.
  3. Add the shark and stir to coat, then add 1 cup water and 1 can coconut cream. Simmer until fish is cooked through.
  4. Serve with jasmine rice.
